PB Banana Cocoa Pancake Stack

Made this lovely dish this morning to help brighten the snowy weather. Well and because I’m slightly addicted to pb. šŸ™‚

PB Banana Cocoa Pancake Stack

Ingredients
Whole Wheat Pancake mix, I use Kodiak brand
1-2 tbsp of unsweetened cocoa powder
Natural Organic peanut butter
1 banana
1 tsp cinnamon
2 tsp Splenda brown sugar
Olive oil spray or something to cost the pan while cooking

Directions
I made the batter as directed adding cocoa, brown sugar and cinnamon. Cook as directed. I usually use a 1/4 measure cup for batter. Once cooked I added slight layers of peanut butter and bananas. We served them with homemade maple syrup.

    • I have been eating Veggie shreds or using other foods with a creamy texture like avocado. I did see a recipe that uses tofu to make a faux feta. For those who like it, goat cheese seems fine to use as well.
