Hello ya’ll…Here is another zucchini recipe, I adapted this recipe from here..making my own healthy changes of course 🙂
1 2/3 cup of whole wheat white flour
1/2 cup sugar substitute
1tsp ground cinnamon
1 1/2 teaspoons of baking powder
1/2 teaspoon of baking soda
2 tbsp of ground flax meal
1/4 teaspoon of salt
1 1/3 cup shredded zucchini
1/2 cup of ff milk
2 tbsp of coconut oil
2 tbsp of honey
Preheat oven 400F
Mix all dry ingredients first together, then in another bowl mix wet ingredients ( milk-honey)…build small well in dry ingredients pouring in wet ingredients..either spray muffin pan or put in cupcake liners..fill about 2/3 way then bake for 15mins or until golden brown..cool on wire rack..
Yummy shredded zucchini
Each batch makes about 12 muffins..I made two batches adding semi-sweet chocolate chips into the 2nd batch. I found them great to freeze as well.
