Cha-Cha Chia!

Ok, So I have jumped fully on the Chia Seed bandwagon!! and YES I mean Chia seeds, like in Chia Pet!!

Chia seeds are said to be a source of antioxidants, omega 3 fatty acids, fiber, calcium and iron. As well as be lower in calories!! They are pretty tasteless and a great addition to dishes like smoothies, baked goods, yogurt or salads. I have made a couple of recipes this past week in which I plan to post them ALL..Ha..Here is just a sample..

Cinnamon-Raisin whole wheat pancakes

Ingredients – 

Box of whole wheat pancake mix

Ingredients to mix ( water, egg, oil,etc.)

Cinnamon

Vanilla

Raisins

Chia Seeds

Butter , Margarine or pan spray

Directions- mix pancake batter as directed on box, add 2 tbsp of raisins, 1tsp of vanilla and 1tbsp of raisins

Mix ingredients

Once batter is poured onto hot pan, I sprinkled the chia seeds on the pancake. I found this easier, because not all the seeds mixed well in the batter. Cook pancake as directed then ENJOY!!

We served them with butter and honey 🙂
