I have been wanting to make these or a version of these cake pops for a while now. Since we had friends over this past weekend I thought I would make these, cut out heart Champagne Cupcakes. Basically it’s cake mix with champagne added to it topped with home-made champagne frosting. The recipe is for cake balls, but I adapted it to make cupcakes and sorry it’s not RD approved healthy! But everything in moderation, RIGHT?!
1 box of white cake mix
Champagne ( sweet)
Eggs, oil or whatever else needed to make mix
Food coloring, optional
Basically, follow the directions on the box. The trick is, to replace the water needed to make the mix with champagne. Add food coloring if desired
Bubbles in the batter 🙂 ( That would make a cute OPI name)
Make sure to fill at least 3/4 way. Cook as directed on box.
This is one of the few times when you WANT muffin top!
Cut the muffin tops off. Then turn the top part over, so top of muffin is showing. Then take a heart-shaped cookie cutter and cut out a heart.
Frost the top of the bottom muffin portion, then place muffin top back on. I did add sprinkles to the hearts on some of them.
1 cup of butter, softened
1/4 cup champagne
1/2 tsp vanilla
4 cups powdered sugar
Using a large mixing bowl, cream butter and sugar together on low until you get a creamy mix. Then add champagne and vanilla. Then set in fridge to set.
I also made these super moist sugar cookies to add the cut out heart onto.
